Tell us who you are and what you do.

My name is Chelsea Williams, and I’m the Founder of That’s Chelsea. I’m a plant-based public health nutritionist, digital content creator, and wellness writer based in Los Angeles, CA.

How have you been handling things this year? Do you have any tips for staying grounded during this time?

I’ve been staying grounding by spending as much time outdoors and offline as much as possible. “Boundaries” has been my word for 2020! Establishing new boundaries to protect my peace and creative energy as much as possible has been a game-changer. I turn my devices off for a few hours each day, so I can sit with my thoughts and tap into my inner voice. It seems like I need it now more than ever. High-intensity exercise always boosts my mood. I like to keep my hands busy, so I’ve been pouring into myself and my business more than ever. I’m working on a book, creating downloadable resources, and learning a few new skills in the process.

Tell us your philosophy on “wellness” and what it means to you.

For me, wellness has always been about simple living. Simple ingredients, simplifying my schedule, a simple wardrobe, and really, just living with less. The simplest things make me feel the healthiest and happiest. Talking less, listening, and learning more. Laughing with a loved one, walking daily, spending a few minutes in the sun, anything that can help me slow down and uncomplicate life makes me feel well.

Tell us about some of your favorite plants. How do you incorporate them into your life?

One of my favorite plants is nettle. I drink nettle infusions a few days a week. Nettle is rich in silica, sulphur, and contains traces of zinc, which are great for the health of the hair. It helps keep my hair naturally dark, so I also use it as a rinse for my hair. I think gray hair is beautiful, but I’m not ready to go gray just yet. I incorporate nettle (and also he shou wu) as a natural remedy to prevent graying. Nettle can also help strengthen the immune system!

My favorite houseplants that I own right now are my Rhapis palm, fiddle leaf fig, monstera, bird of paradise, and a money tree that I was recently gifted. Please, don’t tell the others because some of my plants get jealous very quickly!

Do you have any sustainability practices? If so, please share!

I recycle glass jars from sauces, non-dairy yogurts, and other products and use them to regrow or store herbs and other miscellaneous items in my home. I also invest in sustainable materials like stainless steel and bamboo. I opt for reusable grocery bags, buy in bulk, and make cleaning products. What’s one thing you do to keep your immune system strong and resilient?

I consume elderberry syrup daily. It’s full of antioxidants and vitamins that can help keep the immune system strong. I love the taste, so it’s easy for me to remember to take it.

Your go-to easy recipe?

I’m a serious curry lover. When I want something easy, yet filling, I pull out my crockpot and make this yellow curry.

Your favorite place to travel and why?

I’m such a beach baby. As long as it’s warm outside and I’m near the water, all is well.

What’s one thing people might be surprised to learn about you?

I’m 6 feet tall!
